Food Storage:

Raw meats, poultry, and seafood should always be stored in a manner that will keep it from dripping onto other foods. Raw foods should always be stored below other foods, but may also be placed in a container such as a plate or tray to prevent cross-contamination.

Cleaning Surfaces:

Cleaning surfaces before, during and after use will help prevent cross-contamination. Here are a few tips to help you combat cross-contamination:
  • Use different cutting boards for raw meat products and salad items
    • Use a plastic or non-porous cutting board
    • Cutting boards should be run through the dishwasher or washed with hot, soapy water after each use
  • Never place cooked food on a plate that has previously been used for raw meats (unless it has been thoroughly washed)
  • Wash all dishes and utensils in the dishwasher or with hot-soapy water
    • Make sure to thoroughly scrape off leftover food before washing
  • You may sanitize dishes, utensils, and surfaces using bleach water. For every gallon of water use ½ to 1 capful of bleach.
    • To sanitize dishes and utensils submerge them in bleach water for 30 seconds
    • To sanitize surfaces use a cloth that has been saturated in bleach water

    Remember: items must be washed and rinsed before sanitizing

  • Use paper towels, soap, and hot water to clean kitchen surfaces. Promptly dispose of paper towels after use. Freshly-cleaned sponges or cloths may also be used, but paper towels are recommended.

To keep your sponge clean:
  • Replace your sponge every week
  • Remove organic material and let the sponge dry completely between uses
  • Run the sponge through the dishwasher
  • Place a wet sponge in the microwave oven for 1 minute

    To keep your kitchen cloths clean wash them in the washing machine and dry them on high heat.
